Sussreserve

Sussreserve is unfermented grape that is set aside while the other grapes are fermented and made into wine. The Sussreserve is then added to the wine to make the final blend. This German technique usually uses Riesling and Muller-Thurgau.

Sussreserve Wine Production

The grape juice increases the sugar level and decreases the alcohol percentage of the wine. In Germany, it is illegal for the finished blend to contain more than 15% juice.

Because this juice comes from the same grapes that were fermented into the wine, the blend is smoother and more consistent than it would be by simply adding sweetener. But producers do make sweet wines using these cheaper methods. Some argue that Sussreserve is always a little disjointed from the fermented wine.
