Sherry
Sherry Production in California and Spain
Use of the name is strictly regulated by Spanish law, though some American producers make generic versions of the wine. However, they have to include “California” or some other region before the name Sherry. These are generally not noteworthy. Genuine Sherry is produced using the Muscat, Palomino and Pedro Ximenez grapes.
Sherry is made in several different quality levels. These include Fino, Manzanilla, Amontillado, Palo Cortado, Oloroso, and Jerez Dulce (Sherry that has been sweetened). The solera system is used whereby a portion of Sherry is transferred periodically between several different oak barrels.
