William Hill Estate was founded in 1978 and is currently owned by Fortune Brands. The winery produces Cabernet Sauvignon, Merlot, and Chardonnay. Their Aura Cabernet Sauvignon is particularly noteworthy and is made in limited quantities.

Since the winery was established, the focus of William Hill Estate has always been on Cabernet Sauvignon and Chardonnay. In 1980, William Hill first began planting his 142 acre property with vines. He built production facilities on the estate a decade later. In 1992, Mr. Hill sold his vineyards and winery to Allied Domecq Wines USA. Two years ago, Fortune Brands bought the property.

After working at Robert Mondavi Winery for several years, Richard Sowalsky joined the team at William Hill as winemaker. He also previously worked for Handley Cellars in Anderson Valley. Antonio Fernandez currently manages the vineyards and works closely with Sowalsky.

The William Hill 1999 Aura Cabernet Sauvignon is the winery’s flagship Cab. It is a full-bodied, deeply colored wine that will improve in the cellar for over a decade. The decadent flavors are the result of dark berry flavors, French Oak and velvety tannins. A little over 500 cases are produced annually.

The 2001 Cabernet Sauvignon is a mellow wine with smooth tannins, subdued oak and ripe blackberry flavors. 2001 was a great vintage for many Napa Valley Cabs and this wine is no exception. It is ready to drink immediately.
