Tex Sawyer is the winemaker at Scharffenberger Cellars. He is a talented producer of sparkling wines and has an exceptional ability for blending. Sawyer uses the methode Champenoise and adheres to the traditions of the oldest and best Champagne houses of France.
In 1991, Scharffenberger built a modern, 35,000 square foot production facility. A combination of Old World traditions and technologically advanced quality control is the key to the winery’s consistency. Prime Pinot Noir and Chardonnay grapes are used for the cuvees.
In 2004, Maisons Marques & Domaines purchased the winery. Through all of the transitions, winemaker Tex Sawyer has continued to uphold the label. His Brut is a blend of two-thirds Pinot Noir and one-third Chardonnay. This wine undergoes 100% malolactic fermentation which gives it a lush, creamy texture.
