Sapid Wines is based in the Santa Clara County AVA. The winery produces Cabernet Sauvignon, Merlot, Syrah, Zinfandel, and Chardonnay with grapes grown in the Central Coast AVA.

Sapid Wines is owned by Jason Goelz. Goelz currently makes his wines with grapes from a single property: Dorcich Vineyards- Uvas Canyon (near the town of Gilroy). In the future, wines will also be produced from Dorcich Vineyards- Cupertino, and Mission Shadow Vineyard in Fremont.
Sapid’s red wines are aged in American oak, and are made in a full-bodied, fruit forward style. Current releases include the 2004 Central Coast Cabernet Sauvignon and the 2004 Central Coast Syrah. The winery produces a single white wine: the 2005 Central Coast Chardonnay. Fermented in stainless steel tanks, this wine has nice acidity and fresh fruit flavors.
The 2004 Central Coast Cabernet Sauvignon was made with grapes from Dorcich Vineyards- Uvas Canyon. This wine has assertive fruit flavors that mingle nicely with the American oak. 10% Merlot was blended with 90% Cabernet Sauvignon to fill out the mid-palate.
Sapid’s 2004 Central Coast Syrah is also made with grapes from Dorcich Vineyards- Uvas Canyon. This is a 100% varietal wine that was aged in American oak for 18 months. It has bright acidity that blends well with its moderate alcohol (13.95%).
The 2005 Sapid Central Coast Chardonnay is a product of the long, methodical 2005 growing season. The grapes were able to ripen methodically throughout the summer and were ripened by an August heat wave. The grapes were hand harvested and carefully pressed before being fermented in stainless steel tanks.
