In addition to Syrah, the winery also makes small amounts of Roussanne, Viognier, Mourvedre, and Grenache. The goal of each wine is capture the natural terroir or essence of the location the grapes were grown.

Pax uses grapes from several vineyards including Alder Springs Vineyard in Mendocino County, Castelli-Knight Ranch in Russian River Valley, Lauterbach Hill in Russian River Valley, Walker Vine Hill in Russian River Valley, Obsidian Vineyard in Knights Valley, and Griffin’s Lair in the Sonoma Coast AVA.

In the winery, Pax uses only naturally occurring yeast for fermentation. The grapes are handled and manipulated as little as possible. The wines are aged in French barrels and are not fined or filtered.

There is a picture of Pangea Ultima on the labels. This was the single land mass on earth hundreds of millions of years ago before the continents separated. It represents the fact that although there are many different places in the world, at one time each was part of a single piece of land.
