Parador Cellars
Based in the town of Yountville, Parador Cellars makes a very popular, but unconventional blend of Cabernet Sauvignon, Tempranillo, and Sangiovese. The winery was established by Steve Ventrello in 1998.

Ventrello sources Tempranillo from Terry Wilson’s vineyard in Wooden Valley. Part of the larger Napa Valley AVA, Wooden Valley is located in the Eastern Vaca Hills. Ventrello was able to secure very high-quality clones from the famous Ribero Del Duero region in Spain.
Parador’s Cabernet Sauvignon is purchased from Henry and Susan Hossfeld’s vineyard in Soda Canyon. This property is also located in the Eastern Vaca Hills of Napa Valley, but to the northwest of Wilson’s vineyard. The Sangiovese is grown by Caldwell Vineyards in the Coombsville region.
In addition to Parador’s proprietary blend, the winery also produces the occasional single vineyard bottling. Past vintages include the 2001 Watchtower Vineyard Cabernet Sauvignon, 2001 Hossfeld Cabernet Sauvignon, and 2003 Rancho Chimiles Tempranillo.
