Dover Canyon Winery is located in the northwest part of the Paso Robles AVA. This is an unpretentious yet premium quality producer that really sums up what Paso Robles has become famous for.

Dan Panico is the winemaker and owner of Dover Canyon Winery. Mr. Panico limits his annual production to 2,500 cases a year which is far below demand. But this allows him to retain his artisanal, hand-crafted approach.

Prior to establishing his own venture, Panico made wines for Gary Eberle at Eberle Winery; another excellent Paso Robles winery. Mr. Eberle has extremely high praise for Panico: “Dan is the first assistant I ever granted the full title of winemaker. I could trust him implicitly.”

The winery specializes in old vine Zinfandel, Syrah, Grenache, Mourvedre, Cabernet Sauvignon, and Malbec. Dover Canyon’s hillside vineyards are planted in very well-drained, calcareous soil. The 2004 Alto Pomar is a deeply flavored wine that is a blend of 36% Mourvedre, 33% Grenache, and 31% Syrah.

The 2003 Bone Lore is a blend of 75% Cabernet Sauvignon, 13% Malbec, and 12% Syrah. This is a delightfully balanced wine with 13.8% alcohol. The Syrah works beautifully with the Cab, adding to the mid palate. The Malbec adds gorgeously concentrated pigments.
