Coyote Crest Vineyards & Winery takes a very labor intensive approach to their winemaking, but this effort is apparent when you taste the wine. The production facilities use gravity rather than pumps to minimize intervention. Additionally, all of the wines are hand punched 3 times a day during fermentation.
Phil and Marilyn Cool are the owners of Coyote Crest. In 1985, they purchased 32 acres of undeveloped land. They have since planted many acres of quality vineyards, many of which are on sunny hillsides.
The 2002 Dos Rios is a blend of Cabernet Sauvignon and Merlot from hillside vineyards in Alexander Valley. The lots of Cab and Merlot were aged separately in 50% new French oak for 12 months before being blended and spending an additional 14 months in oak.
Coyote Crest’s 2002 Estate Cabernet Sauvignon is made with meticulously selected grapes from the best hillside vineyard blocks. This wine was aged in 50% new French oak for 26 months before bottling.
